Cinnamon Banana Bread

Ingredients
  

  • 1 cup Ripe bananas Mashed (about 3)
  • 2 Eggs
  • ¼ cup Almond Milk
  • 1 tsp Vanilla
  • ½ cup Safflower oil melted (could also use Coconut oil or Applesauce)
  • cup Brown sugar Can also use coconut sugar
  • 2 cups All-purpose flour
  • 1 tsp Baking soda

For Cinnamon crumble topping

  • 2 tbsp Coconut oil melted
  • 3 tbsp All-purpose Flour
  • 6 tbsp Organic Cane sugar
  • 1 tsp Cinnamon

Instructions
 

  • Preheat oven to 350 degrees, grease baking dish
  • Cream the oil and sugar in mixer (approximately 3 minutes)
  • Add eggs, Vanilla and Almond milk to mixture and mix well
  • Add in bananas
  • In a separate bowl, mix together flour and baking soda. Add these ingredients to the bowl of wet ingredients
  • Mix until both are fully combined
  • Pour batter into baking dish
  • Sprinkle Cinnamon crumble mixture evenly over top of batter
  • Bake for 55(ish) minutes, may vary on oven. Insert a toothpick into bread, and when it comes out clean, remove bread from oven
